June 14- Dinner & recipe!

Asian Tofu Salad
1 lb. firm tofu, cut into 1" chunks and seared
1 small can mandarin orange sections, drained
1/2 cup red bell diced
1 cup edamame
1 cup Asian sesame ginger dressing
toss together gently and serve on spinach, mixed greens or in a wrap
Garnish with fried won ton strips  **I left these off
For extra nice garnish, sprinkle black sesame seeds on top **these too 
(Substitute grilled chicken breast for tofu, if desired)

Can be served cold or hot - I'm eating it hot, on a bed of mixed greens.  Would also be good in a wrap.

And a glass of red wine, as usual... 

LATER:
I got seconds.  But that's ok.  And another glass of wine.  And that's ok too.
